Nick's Chicken Broth Recipe

Ingredients

  • 1 Chicken Back  from 99 Counties
  • 2 celery ribs, cut into 2-inch segments
  • 1 large unpeeled onion, quartered
  • 2 carrot, cut into 2-inch segments
  • 1 bunch parsley (stems and leaves)
  • Salt, to taste
  • Black pepper, to taste

Directions:

Combine Ingredientst:

Place the chicken back into a large stock pot. Add veggies (we use celery, onion, carrots, parsley.) Cover with water. Add salt and pepper to taste.

Boil to Simmer:

Bring to a boil and immediately reduce heat to bring the stock to barely a simmer. Simmer partially covered for 4 - 12 hours, depending how concentrated you want it to be, occasionally skimming off any foam that comes to the surface. You can even simmer it up to 24 hours in your crock pot if you’re looking for a really rich chicken broth.

Strain:

Remove the bones and vegetables with a slotted spoon and strain the stock through a mesh sieve.
