Product Description: Wild Alaska sablefish, also known as black cod, is unparalleled with its beautiful white flake and velvety texture. They swim at depths of 1,200-3,000 ft and they use their fat to regulate their buoyancy at extreme depths. They boast one of the highest fat contents of all fish species and are almost impossible to overcook. Portions are 5-7 ounces, carefully frozen, and vacuum-sealed with skin on and pin bones in.
Cooking Tips: Sablefish has a rich, buttery-sweet flavor with more Omega-3 fatty acids than even king salmon, making it hard to overcook. Pan-sear it to crisp the skin and served with acidic sauces, or try it “Nobu-Style” (miso-sake-mirin marinated then baked).
Sourcing: Caught using longline gear and slinky pot gear in the coastal waters of Southeast Alaska.
