A little known secret and likely one of the “butcher’s cuts” would be this beautiful cut of meat. It’s full of flavor, tender enough to be a crowd favorite, and super easy to slice thin for family and friends to grab off the cutting board.
Directions:
- You’ll want to season it per usual, place in a cold cast-iron pan, and place in a 225 degree oven.
- Start probing your meat after 30 minutes and bring your steak up to about 120 degrees…likely around 40-45 minutes depending on the oven.
- Pull the cast-iron out of the oven and place on the stove-top burner on medium-high. You’ll want to add a little bit of clarified butter, olive oil, tallow, or even some bacon fat to the pan and sear on both sides until you get that good dark color.
- Let rest for 15 minutes, slice thin against the grain, and enjoy!
